Colorful Onion Recipes


Onions - yellow, white, red, green - lovely colors, great for seasoning dishes, livening them up a bit here and there! Try sweet Vidalias, Mayas, Spanish or those little pearl onions.

Roasting Onions

Peel the onions, leaving the root end intact. Quarter them, toss with canola or olive oil and roast at 350 degrees for 20 - 30 minutes. For dry roasting, spread them on a baking sheet. To keep them more moist, use a covered pan, then uncover for 5-7 minutes at the end of cooking. Shake the pan a few times during roasting to evenly brown the quarters. This can be done with white, sweet, yellow or red onions.

Pearl onions can also be roasted, but will take less time. To peel pearl onions, drop them in boiling water for about a minute. Drain and you should be able to remove the outside peels easily.

Salads or Side Dishes

Combine onions with steamed green beans and serve hot, cold or at room temperature.

Sherry Spanish Onions Make this dish for special occasions.
Peel and slice large Spanish Onions into thick slices, about 1/2" thick. Spray with oil, layer on a baking sheet and roast for 20-25 minutes. Carefully remove using a spatula to the serving plate. Drizzle with olive oil, Sherry wine vinegar, sliced toasted almonds (or toasted pine nuts), chopped fresh chives and serve.


Quick Tips: Add peeled quartered onions to any
roasted poultry recipe. They will absorb the
cooking juices and carmelize.
