  • Add prepackaged baby spinach to tossed salads.

Basic Preparation
Soak fresh spinach in a sink full of water. Drain well and soak again until it rinses clean of sand or dirt. Just drain and shake off the water, spinach doesn't need drying.
Sauteed Spinach
Tender young leaves cook very quickly about 2-4 minutes. The curly Cello spinach takes longer, typically 5-7 minutes more, and has a stronger taste. Spinach 'melts down' quickly, so spray a little oil in a large saute pan and add the spinach handful at a time. Try these in an omelet for a quick, tasty meal!
Spinach Salad
Any of the variations can be made as a salad - just steam the leaves instead of sauteeing or use raw tender young spinach.
Variations
Saute 1 pound spinach with:
Toss with: Notes:
1/2 teaspoon minced garlic 2 tablespoons chopped sundried tomatoes Saute garlic 30 seconds before adding other ingredients.

1 teaspoon sesame seeds
(option: toast the seeds)
1 Tablespoon soy sauce Or use sunflower seeds and balsamic vinegar.

1 cup sliced mushrooms
(any kind or mixed)
1/4 cup chopped roasted red pepper
dash of Balsamic
Saute the mushrooms first for 2 minutes.
